Information: Our Wu Yi Oolong is a very popular Oolong tea from the Wu Yi Mountains in the Fujian province of China. It is often the favorite among Gong Fu Tea (Chinese Tea Ceremony) drinkers. In China, this tea can be found in most high end restaurants' menu. Our Wu Yi Oolong Wu Yi Oolong grows in the gaps of the mountainous rock of the Wu Yi Mountains, a name that has became a synonym of high quality Oolong teas. This tea is famous for its 'dragonfly's head, frog's limbs and three colors.' The latter refers to the green, red and brown colors found in the cross-section of each leaf.

This tea brews up a full bodied Oolong tea with a floral aftertaste. Oolong means semi fermented. After rolling, the tea is allowed to ferment only until the edges of the leaves start to turn brown. The tea is then fired which arrests the fermenting process and captures the interesting character associated with Oolong tea.

Hot tea brewing method: Oolongs teas are best enjoyed when the leaves are briefly infused with hot water, which is then poured off. The tea is then reinfused and tea is poured to the lucky guests after about 1-3 minute. As with all other Oolong teas, Wu Yi Oolong may be infused a number of times, with each infusion revealing a new nuance of the tea's complex flavor.

Iced tea-brewing method: (to make 1 liter/quart): Place 6 teaspoons of tea into a heat resistant pitcher. Pour 1 1/4 cups freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into the pitcher straining the leaves. Add ice and top-up with cold water. Garnish and sweeten to taste.
